Cooking With Microgreens Doesn't Require a Fancy Kitchen
Most microgreen recipe content online involves ingredients that require a specialty grocery trip, equipment most people don't own, or techniques that assume you've been to culinary school. This is none of that. These are five recipes designed around a real Ontario kitchen: practical ingredients, reasonable prep times, and results that are genuinely worth making again.
Recipe 1: Sunflower Microgreen and Egg Scramble (10 Minutes)
Serves: 2 | Prep + cook: 10 minutes
Ingredients:
- 4 large eggs
- 2 tbsp butter or olive oil
- 2 tbsp cream or milk
- Salt and pepper
- Large handful of sunflower microgreens (~30g)
- Optional: shaved parmesan, hot sauce
Method: Whisk eggs with cream, salt and pepper. Melt butter over medium-low heat. Add eggs and cook slowly, folding gently — don't rush this. When eggs are just set but still glossy, remove from heat immediately. Fold in sunflower microgreens (they wilt slightly in the residual heat). Top with parmesan if using. Eat immediately. This is better than most brunch restaurant versions, and it costs less than $4 to make.
Recipe 2: 15-Minute Broccoli Microgreen Grain Bowl
Serves: 1 | Prep + cook: 15 minutes
Ingredients:
- 1 cup cooked farro, quinoa, or brown rice (use packet or batch-cook on Sunday)
- 1 soft-boiled egg (7 minutes from boiling)
- Half avocado, sliced
- Handful of broccoli microgreens (~20g)
- 2 tbsp tahini, 1 tbsp lemon juice, 1 tbsp warm water, pinch of salt — whisked together
Method: Warm the grain base. Arrange egg, avocado, and microgreens on top. Drizzle with tahini sauce. Done. High protein, anti-inflammatory, and genuinely filling. Bring this to work in a container and your colleagues will ask about it.
Recipe 3: Radish Microgreen Tacos with Lime Crema
Serves: 2 | Prep + cook: 20 minutes
Ingredients:
- 250g ground beef or black beans (for vegetarian)
- 6 small corn tortillas (warmed in a dry pan)
- Taco seasoning (or cumin, chili powder, garlic powder, oregano)
- Radish microgreens (~20g)
- 3 tbsp sour cream, juice of 1 lime, pinch of salt — mixed together
- Shredded cabbage or pickled onions (optional)
Method: Cook protein with seasoning. Assemble tacos: protein, cabbage if using, a generous pinch of radish microgreens (they provide genuine heat and crunch — don't skip them), a drizzle of lime crema. The radish microgreens replace the need for hot sauce and add actual nutrition. These are better than most taqueria versions, not kidding.
Recipe 4: Pea Shoot and Ricotta Toast (5 Minutes)
Serves: 1 | Prep + cook: 5 minutes
Ingredients:
- 2 slices thick sourdough or whole grain bread, toasted
- 4 tbsp good ricotta or cream cheese
- Large handful of sweet pea shoots (~25g)
- Flaky salt, good olive oil, lemon zest, black pepper
- Optional: honey drizzle
Method: Spread ricotta on toast. Top generously with pea shoots. Finish with flaky salt, a drizzle of olive oil, and lemon zest. Eat immediately. This is the best version of toast you've had. The combination of sweet pea shoot flavour with creamy ricotta and the olive oil is genuinely elegant, and it takes five minutes. The optional honey drizzle elevates it further if you're making this for company.
Recipe 5: Arugula Microgreen and Lemon Pasta (20 Minutes)
Serves: 2 | Prep + cook: 20 minutes
Ingredients:
- 200g spaghetti or linguine
- 3 tbsp good olive oil
- 3 cloves garlic, thinly sliced
- Zest and juice of 1 lemon
- 50g parmesan, finely grated
- Large handful of arugula microgreens (~30g)
- Salt, pepper, chili flakes
Method: Cook pasta to al dente, reserve 1 cup of pasta water. In a large pan, warm olive oil and toast garlic slices until golden. Add pasta, a splash of pasta water, lemon zest and juice, and parmesan — toss vigorously until a sauce forms. Remove from heat. Add arugula microgreens and toss — they wilt partially in the heat and create a peppery, slightly bitter counterpoint to the richness of the oil and cheese. Season generously. This is a legitimate weeknight dinner that costs under $8 for two people.
